What do I need to learn to enable me to play a standard by ear?

How does one go about finding:

1) which chords and voicings are being used
2) how to play what I hear

I am a beginner to theory and would like to know what is the best way to go about playing what I hear. A list of what all one should be familiar with would be super appreciated!
